Dark Chocolate Haystacks

Yesterday I gave a try at making my own chocolate from cocoa powder, coconut oil and maple syrup.  I was inspired by the post at this site that gives instructions for making your own chocolate bars.  I didn’t have the computer on, so I just winged it in the kitchen and wound up easily making very tasty coconut haystacks.  I put in approximately 3x more cocoa powder than oil and just a splash of maple syrup (to taste) I melted the oil over low heat then stirred in the other ingredients- I didn’t want to scorch the chocolate.  When I had it the right sweetness I added in a few handfuls of unsweetened coconut shred and then just used a spoon to make little haystacks on a cookie sheet (next time I’ll out parchment paper on it so they don’t stick.)  I put the cookie sheet in the fridge so the chocolate would harden.  They came out great!   I think I’ll be making some of these for birthday gifts this year.
